Inspired by recipes on TikTok for miso soup in a jar, our version of miso noodle soup comes in a jar. It's a warming main to prep and tote all season long, thanks to this heat and eat recipe. Then use jars labeled "microwave-safe" (check the bottoms); do not microwave the lids.

Ingredients

  • 12 ounces extra-firm tofu
  • 1 tablespoon vegetable oil
  • 1/4 cup sliced green onions
  • 1/3 cup (or 3 tablespoons) white miso paste
  • 2 cloves garlic, minced
  • 1 tablespoon vegetable stock base
  • 1 tablespoon grated fresh ginger
  • 1 1/2 cups cooked rice vermicelli noodles
  • 1 cup thinly sliced shiitake mushrooms
  • 2 bunches of baby bok choy, thinly sliced

Directions

Step 1

Cube tofu into 1/2 inch planks. Combine water and oil in a very large skillet and over medium heat, bring to a boil. Toss tofu with salt, then cook, turning halfway through, until golden, 6 to 8 minutes. Cut tofu into cubes.

Step 2

Put into a small bowl: green onions, miso paste, garlic, stock base and ginger. Place three microwave safe pint size canning jars with lids and divide evenly among them.

Step 3

Combine with rice vermicelli noodles, tofu, mushrooms and bok choy, layer evenly. Chill, covered, up to 5 days. To serve, see "Heat and Eat". Serve garnished with slices green onions.

Heat and Eat

Run under warm water 1 minute or let stand at room temperature 10 minutes. Pour 1 cup of water (about) into ingredients in jar until jar nearly full. Put it in microwave without lid for 3 minutes. Screw lid (jar will be extremely hot) on carefully. Let stand 5 minutes. Add liquid ingredients using jar inverted. Put in the jar or serve in a bowl.

It's a tofu 'jerked' to perfection in a meatless grain bowl. All of which will make your tastebuds dance for joy and the addition of roasted sweet potatoes brings surprise twist!

Ingredients

  • 2 cups white rice
  • 4 cups water
  • Cubed peeled sweet potato (1 large)
  • 3 tablespoons coconut oil or vegetable oil, divided as needed
  • 1/2 red bell pepper, sliced
  • 1/2 green bell pepper, sliced
  • 1/2 orange bell pepper, sliced
  • 1 (14 ounce) package extra firm tofu
  • 15 ounce can black beans, drained and rinsed
  • 1 teaspoon jerk seasoning, or to your taste
  • 2 tablespoons jerk marinade

Directions

Step 1

Place water and rice in a saucepan, and bring to boil. Simmer, covered, 20 to 25 minutes until rice is tender and water has been absorbed, reduce heat to medium low. Keep warm.

Step 2

In a separate bowl, mix all ingredients until well combined, then in a large bowl, combine all dry ingredients.

Step 3

Rub 1 tablespoon of oil on cubed sweet potatoes. It's spread evenly on a baking sheet.

Step 4

Sweet potatoes should be roast in the preheated oven, 15 to 20 minutes until tender but not too soft.

Step 5

In a cast iron skillet, heat 1 tablespoon coconut oil up to low heat and add red, green and orange bell peppers and saute 2 to 3 minutes. Set aside and remove from the skillet.

Step 6

To the same skillet add remaining 1 tbsp coconut oil. Add tofu evenly. Then cook for 2 mins, flip them over and gently place on the other side. Turn occasionally and continue cooking until edges of tofu are a little crisp, about 6 to 8 minutes.

Step 7

Mix in jerk marinade on tofu, making sure the tofu is totally covered. When your tofu caramelize from the marinade, set aside.

Step 8

Place warm black beans in a microwave safe dish, heat in microwave until hot, about 2 to 3 minutes, stirring every 30 seconds.

Step 9

Assemble grain bowls: From here cut tofu, peppers, and sweet potatoes up into pieces and divide rice, tofu, peppers, sweet potatoes, and black beans evenly amongst each individual serving bowl.

And since I love fries in a salad, this crispy tater Caesar salad is for you. In this meal in a bowl, Romaine lettuce and Parmesan are joined by crispy smashed tater tot croutons, a doctored up bottled Caesar dressing, and crispy chicken cutlets.

Ingredients

  • Frozen crispy chicken cutlets, 8 ounces.
  • Cooking spray
  • Cut (or use) 2 1/2 cups frozen bite sized potato nuggets (Tater Tots®)
  • 1 (8 ounce) package of fresh baby spinach (thawed if frozen)
  • Microplane grated 2 ounces Parmesan cheese, freshly grated, divided, and more to garnish (about 1 cup).
  • 1 cup Caesar dressing
  • 1 teaspoon fresh lemon zest
  • 1 teaspoon anchovy paste
  • 1 tablespoon fresh garlic
  • Divided. 1/2 teaspoon freshly ground black pepper.
  • 1/4 teaspoon kosher salt
  • Finely chopped Romaine lettuce, 4 cups.
  • White balsamic vinegar, 1 tablespoon

Directions

STEP 1

For example, preheat the oven to 425 (220) F. Place 2 shelves close to the oven center. Cooking spray a baking pan, and place the frozen chicken filets on the pan.

STEP 2

Place filets in the preheated oven on the lower-center shelf and bake until hot and crisp, about 20 minutes, turning filets over halfway through heating time. When cool enough to handle, cut off filets and cut into bite sized pieces.

STEP 3

I meanwhile line a large rimmed baking sheet with parchment paper and add the tater tots in an even layer.

STEP 4

Place tots on an upper-center shelf in the preheated oven and bake until tots are soft and a little baked, 8 to 10 minutes. Remove from oven. Spray some cooking spray on the bottom of a cup. Cup and smash each tater tot to a flat disk.

STEP 5

Bake until golden brown and crispy, 15 to 20 minutes, return to the oven. Take from oven, and sprinkle with 1/2 cup Parmesan cheese.

STEP 6

Coat well with cheese and then bake again until it's melted, about 1 minute. Cool about 5 minutes.

STEP 7

Whisk Caesar dressing, lemon juice, anchovy paste, garlic, 1/4 teaspoon black pepper and salt in a bowl to make Caesar dressing, then whisk until smooth.

STEP 8

Combine remaining 1/2 cup Parmesan cheese, remaining 1/4 teaspoon black pepper and chicken and lettuce until well mixed. Add half of the dressing to salad mix and toss until salad mix is evenly coated. Toss cooled tater tots, then add until well combined.

STEP 9

Transfer to a server platter and drizzle with white balsamic vinegar garnish with more Parmesan cheese before transferring to serving platter. Serve immediately.
